Preheat & prep: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line with parchment paper if you want that “lift-out” convenience.
Mix dry ingredients: In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg. Set aside.
Mix wet ingredients: In a large bowl, whisk together melted butter, brown sugar, granulated sugar, eggs, vanilla, and yogurt until smooth and creamy.
Combine wet & dry: Slowly fold the dry ingredients into the wet mixture. Don’t overmix; just combine until no streaks of flour remain. Overmixing = dense bread, and we’re here for fluffy goodness.
Add apples: Gently fold in chopped apples. Make sure they’re evenly distributed so every slice gets a little fruity love.
Pour & bake: Pour batter into the prepared loaf pan. Smooth the top and sprinkle cinnamon sugar if desired. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
Cool: Let the loaf rest in the pan for 10–15 minutes before transferring to a wire rack. Slice when slightly cooled for clean cuts.
