Prepare the Apples
Peel, core, and slice the apples into thin wedges. Try to keep the slices fairly even so they cook at the same speed.
Mix the Filling
In a large bowl, combine apples, sugar, brown sugar, flour, lemon juice, cinnamon, nutmeg, salt, and vanilla. Toss everything gently until the apples are coated.
Let the mixture sit for about 10 minutes so the juices start forming.
Prepare the Pie Crust
Place the bottom crust into a pie dish and press it lightly into the edges. No need for perfection here—rustic pies taste just as good.
Fill the Pie
Pour the apple mixture into the crust and spread it evenly. Dot the top with small pieces of butter for extra richness.
Add the Top Crust
Place the second crust over the filling. Seal the edges by pinching or using a fork. Cut a few small slits on top so steam can escape while baking.
Bake the Pie
Preheat your oven to 375°F (190°C) and bake the pie for 45–50 minutes until the crust turns golden and the filling bubbles.
Let It Cool
Resist the urge to slice immediately. Let the pie cool for at least one hour so the filling sets properly.
