Ingredients

  • For the Salmon & Potatoes:
  • 2 salmon fillets 6-8 oz each – skin-on or off, your call
  • 3-4 medium potatoes chopped into bite-size pieces
  • 4 tbsp unsalted butter melted (garlic butter magic, people)
  • 4 cloves garlic minced (go big or go home)
  • 1 tsp paprika optional, but makes it pretty
  • Salt & black pepper to taste
  • Fresh parsley chopped – for that “I tried” look

Instructions

  • Preheat your oven. Crank it to 400°F (200°C). Yes, preheating is mandatory—don’t be that person who skips it.
  • Prep the potatoes. Toss your chopped potatoes with half the melted butter, garlic, paprika, salt, and pepper. Spread them evenly on a baking sheet. They’ll roast first while salmon chills out.
  • Roast the potatoes. Pop them in the oven for 20 minutes. Shake the pan halfway through so they get golden all over. Pro tip: potatoes that look like crispy little nuggets = heaven.
  • Prep the salmon. While potatoes are roasting, brush your fillets with the remaining butter and sprinkle with garlic, salt, and pepper. Don’t be shy—coating every inch = flavor explosion.
  • Add salmon to the oven. After 20 minutes, move potatoes to one side of the sheet and nestle salmon fillets on the other. Bake for another 12-15 minutes, until salmon flakes easily with a fork.
