Preheat your oven to 375°F (190°C). Don’t skip this—your grapefruit deserves the perfect heat.
Slice the grapefruits in half crosswise and remove any seeds. Don’t worry about perfect cuts; rustic is cute.
Sprinkle each half with 1–1.5 teaspoons of brown sugar. Add a dash of cinnamon and a pinch of salt. Optional: a few drops of vanilla extract.
Place grapefruits on a baking sheet cut-side up. If you want to catch extra syrup, line it with parchment paper.
Bake for 15–20 minutes until the sugar melts and caramelizes slightly. Keep an eye on it—sugar burns faster than your patience.
Remove from oven and let cool slightly (or don’t, if you’re impatient like me). The juices will be hot and bubbly.
Optional: drizzle with honey or sprinkle with fresh mint before serving.
