Chocolate Caramelized Pineapple

Ingredients

  • For the Pineapple:
  • 1 fresh pineapple peeled, cored, and sliced into rings or chunks
  • 2 tablespoons unsalted butter
  • ¼ cup brown sugar
  • For the Chocolate:
  • ½ cup semisweet or dark chocolate chips
  • 1 teaspoon coconut oil or butter for smooth melting
  • Optional Extras:
  • Toasted coconut flakes
  • Chopped nuts almonds, macadamia, or pecans
  • Whipped cream or vanilla ice cream for serving

Instructions

  • Prep the Pineapple: Slice the pineapple into rings or bite-sized chunks. Pat dry with paper towels (this helps caramel stick).
  • Caramelize: Heat butter in a large skillet over medium heat. Sprinkle brown sugar evenly and let it melt. Place pineapple in the skillet, cook 2–3 minutes per side until golden and caramelized.
  • Melt Chocolate: In a small microwave-safe bowl, melt chocolate with coconut oil in 20-second intervals, stirring between each. Aim for smooth, pourable chocolate.
  • Drizzle & Decorate: Remove caramelized pineapple from heat. Arrange on a serving plate and drizzle chocolate over the top. Sprinkle optional toasted coconut or nuts for extra flair.
  • Serve: Enjoy warm as-is, or pair with vanilla ice cream or whipped cream for a tropical dessert explosion.
