Ingredients

  • 12 Medjool dates – soft plump, and totally begging for chocolate.
  • 3 –4 oz dark chocolate – the higher the cocoa content the more adult this treat feels.
  • 1/4 cup nuts – almonds pecans, or walnuts, optional but highly recommended for crunch.
  • Pinch of sea salt – because even dessert needs a little drama.
  • 1 tsp coconut oil – optional helps the chocolate melt smoothly.

Instructions

  • Prep the dates: Slice each date lengthwise and gently remove the pit. Don’t tear them apart completely—they should still hold their shape like little candy boats.
  • Melt the chocolate: Combine chocolate and coconut oil in a microwave-safe bowl. Heat in 20-second intervals, stirring each time, until smooth and glossy. Alternatively, use a double boiler.
  • Stuff with nuts: Place one almond, pecan, or walnut into each date. Feel free to get creative—mix it up or even stuff a few with peanut butter for extra indulgence.
  • Fill with chocolate: Spoon or pipe melted chocolate over the nuts, letting it drip just enough to cover the filling. Don’t drown them, or you’ll lose the date’s chewy charm.
  • Set the chocolate: Place the stuffed dates on a parchment-lined tray. Chill in the fridge for 15–20 minutes until the chocolate hardens.
  • Sprinkle with sea salt: Optional, but a pinch of flaky salt really elevates the flavor.
