Cookie Dough Energy Bites Recipe

Ingredients

  • 1 cup peanut butter – creamy or chunky your call. Either way, it’s peanut-buttery heaven.
  • 1/3 cup honey or maple syrup – for stickiness and sweetness.
  • 1 tsp vanilla extract – because plain peanut butter is great but vanilla makes it divine.
  • 1 cup rolled oats – adds texture and “I’m healthy” vibes.
  • 1/2 cup mini chocolate chips – the cookie dough soul of the recipe.
  • Optional: 2 tbsp chia seeds flaxseed, or protein powder – if you’re pretending these are even more wholesome.

Instructions

  • Mix the wet ingredients. In a medium bowl, stir together peanut butter, honey (or maple syrup), and vanilla extract until smooth. Your arm will thank you.
  • Add the dry ingredients. Stir in rolled oats, chocolate chips, and any optional seeds or protein powder. Mix until everything is evenly combined. You want a slightly sticky, moldable dough.
  • Chill (if needed). Pop the mixture in the fridge for 15–20 minutes if it’s too soft to handle. This helps with rolling.
  • Roll into bites. Scoop small spoonfuls and roll into 1-inch balls. Don’t worry about perfection; they’re bites, not museum sculptures.
  • Optional coating. Roll in extra oats, cocoa powder, or finely chopped nuts for an extra fancy touch.
  • Store. Keep in an airtight container in the fridge for up to a week, or in the freezer for longer. Perfect for “I need chocolate now” emergencies.
