Ingredients

  • 1 pound ground beef 80/20 for flavor, 90/10 if you’re counting calories
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning mix or homemade blend
  • 1/2 cup water or beef broth
  • 8 small tortillas corn or flour, your call
  • Shredded cheese lettuce, diced tomatoes, and cilantro for toppings
  • Sour cream or Mexican crema optional
  • Tomato salsa or pico de gallo optional but delightful

Instructions

  • Brown the beef in a skillet over medium-high heat. Break it up with a spoon as it cooks. About 5–6 minutes until no pink remains.
  • Add the onion and garlic. Cook until the onion is soft and translucent, 2–3 minutes. Your kitchen should smell like taco victory by now.
  • Sprinkle in the taco seasoning. Stir to coat the meat, letting the spices wake up for about 30 seconds.
  • Pour in water or broth. Simmer 4–5 minutes, until the mixture thickens slightly and the flavors marry. Taste and adjust salt if needed.
  • Warm the tortillas in a dry skillet or microwave. Keep them soft and flexible—napping tortillas are the dream.
  • Fill each tortilla with the seasoned beef. Top with your favorite fixings: cheese, lettuce, tomatoes, cilantro, and a dollop of sour cream if you’re into rich vibes.
  • Serve immediately and revel in the taco glory. Optional: squeeze a lime over the top for a bright finish.
