Prep the pan: Pat salmon dry, then season with salt and pepper. Preheat your skillet over medium-high heat until it sizzles when you flick water.
Make the glaze: In a small bowl, whisk honey, soy sauce, minced garlic, and lemon juice. If you like a touch of heat, whisk in the chili flakes.
Sear the salmon: Add olive oil to the hot pan. Place salmon skin-side down (if skin is on). Cook 3–4 minutes until the edges look opaque.
Flip and glaze: Flip the fillets, then spoon the honey-garlic glaze over them. Cook 2–3 minutes, basting gently, until the sauce thickens and the salmon is just cooked through.
Finish and rest: Remove from heat. Let the salmon rest for a minute to keep it juicy. If you want extra shine, drizzle a tiny bit more glaze on top.
