Peanut Butter Oreo Ice Cream Sandwiches

Ingredients

  • Oreo cookies – Classic works best but double-stuffed is not a bad idea. Just saying.
  • Creamy peanut butter – Smooth spreads easily and keeps things neat-ish.
  • Ice cream – Vanilla is classic chocolate is elite, peanut butter ice cream is chaos (the good kind).
  • Optional toppings – Crushed Oreos mini chocolate chips, or chopped peanuts if you’re feeling fancy.
  • Pro tip: Let the ice cream soften slightly. Rock-hard ice cream will test your patience and possibly your spoon.

Instructions

  • Separate the Oreos.
  • Twist them apart carefully. Try not to eat half of them during this step. Try.
  • Spread the peanut butter.
  • Take one Oreo half and spread a thin, even layer of peanut butter on the cookie side (not the cream side). Don’t overdo it unless you want a slippery situation later.
  • Add the ice cream.
  • Scoop a small mound of softened ice cream onto the peanut butter layer. Press gently so it sticks.
  • Top it off.
  • Place the other Oreo half on top, cream side facing the ice cream. Press lightly to create a sandwich.
  • Freeze until firm.
  • Arrange the sandwiches on a tray lined with parchment paper. Freeze for at least 1–2 hours until solid.
  • Optional glow-up.
  • Roll the edges in crushed Oreos or chocolate chips before freezing if you want that “store-bought but better” vibe.
