Ingredients

  • For the Cream Layer
  • 1 cup heavy whipping cream – whipped fluffy like clouds
  • 2 tbsp sugar – just enough sweetness
  • ½ tsp vanilla extract – the magic flavor booster
  • For the Fruit
  • 2 ripe bananas – sliced soft, and sweet
  • 1 cup fresh strawberries – chopped juicy, or sliced thin
  • Optional: a squeeze of lemon to keep fruit from browning
  • For the Base
  • 1 cup granola or crushed graham crackers – adds crunch and texture
  • Optional: nuts chocolate chips, or shredded coconut for flair

Instructions

  • Prep the Cream
  • Whip the heavy cream with sugar and vanilla until soft peaks form. Don’t overwhip, or you’ll have butter… which is not what we’re going for here.
  • Prep the Fruit
  • Slice bananas and chop strawberries. If using, add a tiny splash of lemon juice to keep bananas from browning.
  • Layer the Parfaits
  • Grab your favorite glasses or mason jars. Start with a layer of granola/crushed crackers at the bottom, then a layer of cream, followed by bananas and strawberries. Repeat layers until you reach the top.
  • Chill
  • Pop them in the fridge for 30–60 minutes so flavors meld and the cream firms up. Optional: serve immediately if you can’t wait (I don’t blame you).
  • Garnish & Serve
  • Top with extra strawberries, banana slices, a sprinkle of granola, or a drizzle of honey. And maybe a little mint if you’re feeling fancy.
