Stir in the coconut milk, vanilla, and salt. If the mixture seems thick, splash in a bit more coconut milk—you’re aiming for a scoopable but not runny texture.
Fold in 1/2 cup shredded coconut. This is where the coconut vibes really start to sing. Chill the mixture 20–30 minutes until it’s firm but scoopable.
Scoop and roll into 1-inch balls. If the mixture sticks, dust your hands with a touch of powdered sugar or chill a bit longer.
Roll each ball in extra shredded coconut or dip in melted chocolate for a glossy finish. Place on a lined tray.
Chill until set, about 20–40 minutes. Then bask in your own deliciousness.
